Vedgee™ is a new way to eat your vegetables

When I was a kid my mama never had to make me eat my vegetables. I actually liked them. My grandma had a garden on both sides of the house that I loved. The only things I struggled with were liver and beans of any sort. Ick! Needless to say, I was intrigued when I heard about Vedgee tortillas.





If you've been reading this blog long enough, you know that the farmers market is one of my favorite spots in town. I think I wrote a few blogs about it. Mind you, I do cook (I have not in a while...but I do.), and I cook for other people. The guys in my life will tell you I throw down in the kitchen!

I love mixing things and finding ways to hide veggies in places you would not suspect. Or turning comfort food healthy. I am from the country. And you know southern folks know how to cook...well some do...some can't make potato salad, so watch yourself. You can't eat everybody's cookin'! LOL

Last Friday, I was supposed to go to another food competition for a company called Vedgee™ at Johnson & Wales, but got caught up talking business with Nikki Panache. 

The marketing gurus who work with Vedgee asked that I let you all know about Vedgee's entrance into the marketplace. 


On Friday, April 19th six finalists took to the kitchen to develop Vedgee tortilla tapas.  The students concentrated on their specific Vedgee flavor and paired it with local, farm fresh ingredients, creating an international dish.  To support the recipe creations, Easy Foods Inc., maker of Vedgee Tortillas, provided each student with a gift card to a local grocery retailer, as well as endless samples of their fresh garden tortillas.  

The competition was open exclusively to JWU students.  The competition is part of their curriculum and the students' final grade for the courses.  Each of the finalists won scholarships as well ranging from $250 to $500.

Other dishes included: Vedgee Roasted Beet and Carrot Salad, Vedgee Multi-Veggie Mexican Bites, Vedgee Sweet Pineapple and Honey Tostada with Jezebel Sauce, Vedgee Summer Vegetable and Goat Cheese Pizza and Vedgee Big Kahuna Fish Wrap.

Vedgee Tortillas will be available in supermarkets in the "produce" section later this spring.  By adding vegetable puree, garden herbs and pure olive oil, our premium tortillas will inspire you to create amazing meals. They are available in eight distinctive new flavors: Garden Cucumber Dill, Chiptole Corn Chives, Multi Veggie Garlic, Spicy Chiptole Pepper, San Marzano Tomato Garlic, Sweet Pineapple Honey and Baby Spinach Garlic.

The company is sending me samples and I cannot wait to come up with a dish. I think they're sending me the Sweet Pineapple Honey one. I will show you all what I make with it. 

I may have to use my guy friend as a food tester. I'm sure he won't mind.
